We spent the latter part of April and early May visiting our suppliers in China and tasting their newly harvested teas. These teas will be arriving throughout the second half of May and early June. It had been a late Spring in many of the tea growing provinces and late frosts had meant that yields were down for the top grade teas and of course prices were up. We spent some time in Fujian province, the home of White Tea and found an extraordinary Silver Needle tea grown Organically by Mr Cho, in a garden his Grandfather had started over 60 years ago. We also bought his Supreme White Peony, most of which was still drying in the late afternoon sun, giving the air the most amazing aroma. Other notable teas in this years collection are the returning Mao Jian, and a beautiful Mao Feng, a new tea for The Teahouse and of course our most popular teas Organic Misty Green and Long Jing. There are several more teas in this years collection, including Yellow, Oolong and Black Teas, we hope you will enjoy them over the next year as much as we do.

2010 Organic White Peony
These will be the teas of 2010! White Tea is produced in such small numbers that is that it very rare. It is far more delicate than a Green Tea due to the time it is harvested, the particular variety of tea plant as well as the method used to dry the leaf. A White Tea has many downy tips signifying the bud was picked whilst very young. The younger tips have higher concentrations of antioxidants and lower concentrations of caffeine than other teas and it is therefore proving extremely popular. The Teahouse is proud to be able to offer these authentic and rare teas to you and we hope you enjoy your selections. Our Spring 2010 harvest has now arrived and this years Silver Needle is stunning, whilst the White Peony just keeps getting better. The Silver Needle from the Organic Garden of Mr Cho, is, quite simply the best we have ever tasted!

YELLOW TEA
Yellow Tea is a variety little known outside of China but one that will become popular in the West. As the name suggests, both the leaves and the infusion are yellow in colour. This colour is obtained by adding an extra step, called "Sealed Yellowing", to the process otherwise fairly similar to the making of Green tea. The length of the yellowing process can vary from thirty minutes in some teas to six days in others, creating a Yellow tea that may be hardly distinguishable from Green tea to one that is distinctively golden. The yellowing process brings about some complex and subtle changes that mellow out the grassy, bitter edge that some green teas can have creating a mellow aromatic cup. Both these Yellow Teas are certified Organic.
